Chopped Chicken

I love using frozen chicken breasts in my meals. I love it even more when they’re already cooked and I can just grab some and throw them in a quick dish. Here’s what I do: I put however many in a baking dish and season them with Complete Season and throw them in the oven until they’re done.

I then slice them into strips, put the strips in a pan and into the freezer they go.

Once they are completely frozen I put them in a ziplock bag and seal. They are now ready for quick meals and salads. When I want some I just take out my desired amount and nuke em for a minute or so.

Flaxseed

I know all the benefits to Flaxseed, but seeing and eating those little seeds just in my oatmeal is just weird. So one of my co-workers told me to try grinding them in my coffee grinder. Much to my surprise it worked! I then enjoyed some Flaxseed with my morning oatmeal. Oats cooked in water, topped with blueberries, walnut and honey. Delicious!

Crockpot Spaghetti

I knew tonight was going to be hectic, so I prepared dinner in advance. Well sort of… This morning before I left for work I put my frozen turkey roll & meatballs in the Crockpot on low. When I returned home it looked like picture #2 (on the top right). I had my onions, bellpeppers and fresh mushrooms already chopped. I then added my vegetables along with a can of tomato sauce to the pot and allowed it to cook a little longer. I put my noodles and bread on while I was doing homework and checking bookbags/agendas. My salad was already chopped and washed the night before. I promise you it all turned out great. I can never seem to get a finished picture because I have 4 hungry boys standing around. However I promise you it all turned out great! Dinner was done in 15 minutes, all homework was checked and I made it to both of my meetings.

Easy Banana Bread

This morning I was in the mood for some banana bread (plus I had a few brown bananas I needed to use). I ventured off to find a quick easy recipe and by chance I had all the ingredients on hand. 1 yellow cake mix 2 eggs 2 bananas (next time I’ll use more) Walnuts A few days ago Mr said he wanted walnuts, so I brought the ones in the shell 😦 he didn’t want those. Lucky for me I had 4 nutcrackers on hand. They are the best! I wish I had gotten them on camera trying different ways to crack them open. It was hilarious. I preheated the oven to 350 and mixed all the ingredients in. I sprayed my bread pan with Pam and poured in the mix.

50 minutes later we had warm banana bread.
